Cottage Cheese Eggs which are Scrambled Eggs with Cottage Cheese are a fabulous, tasty, high-protein upgrade from your basic scrambled eggs.  Adding cottage cheese to the eggs makes them creamy, fluffy and so delicious.  This breakfast life hack is one you have to try.

  • In a medium mixing bowl, whisk together the egg and cottge cheese.
  • Add salt and pepper to taste.
  • Spray a medium nonstick skillet with cooking spray. Heat to low to medium-low heat. Pour the egg mixture into the pan.
  • When the eggs start to set after about 2 minutes, push the eggs away from the pan in a circular motion until they are all set. This should take another 3-5 minutes.
  • Serve with your favorite egg side dishes.

Storage & Leftovers
Like most egg dishes, this is best enjoyed freshly cooked but you can store leftovers in an airtight container in the fridge for two days.
 
Freezing
I would not freeze the scrambled eggs with cottage cheese because they will thaw out watery and hard.
