Cottage Cheese Eggs - Scrambled Eggs with Cottage Cheese

Cottage Cheese Eggs which are Scrambled Eggs with Cottage Cheese are a fabulous, tasty, high-protein upgrade from your basic scrambled eggs. Adding cottage cheese to the eggs makes them creamy, fluffy and so delicious. This breakfast life hack is one you have to try.
In a medium mixing bowl, whisk together the egg and cottge cheese.
Add salt and pepper to taste.
Spray a medium nonstick skillet with cooking spray. Heat to low to medium-low heat. Pour the egg mixture into the pan.
When the eggs start to set after about 2 minutes, push the eggs away from the pan in a circular motion until they are all set. This should take another 3-5 minutes.
Serve with your favorite egg side dishes.

Storage & LeftoversLike most egg dishes, this is best enjoyed freshly cooked but you can store leftovers in an airtight container in the fridge for two days.FreezingI would not freeze the scrambled eggs with cottage cheese because they will thaw out watery and hard.
