This Baked Parmesan Garlic Mashed Cauliflower is the perfect low-carb, low-calorie side dish. Made with mashed cauliflower instead of mashed potatoes, this cozy dish is mashed, tossed with parmesan cheese, and baked to golden perfection.
Steam the cauliflower and garlic for 10-12 minutes until fork tender.
Put the steamed cauliflower, garlic, milk, Greek yogurt, half the Parmesan, salt and pepper in a blender or food processor and blend until smooth.
Put the mixture in an oven friendly casserole dish and top with the remainder of the cheese.
Bake at 350 for 25-30 minutes or until the top browns.
