Peanut Butter Chunky Monkey Overnight Oats

This Peanut Butter Chunky Monkey Overnights Oats is a healthy delicious and simple to make breakfast.  Filled with bananas, coconut, and chunky peanut butter this fun twist on classic Peanut Butter Overnight Oats is inspired by your favorite ice cream flavor.

Ingredients
  

  • 1 cup oats
  • 1 cup vanilla almond milk
  • ½ tablespoon chia seeds
  • ½ cup greek yogurt, plain, vanilla or banana
  • 2 tablespoons peanut butter, divided
  • banana, sliced
  • 1 tablespoon coconut flakes
  • 1 tablespoon mini chocolate chips

Instructions
 

  • Mix the oats, almond milk, and chia seeds in a container. Put in the fridge overnight.
  • In the morning mix in the greek yogurt, and half of the peanut butter.
  • Top with the remaining peanut butter, banana, coconut flakes, and mini chocolate chips.

Storage & Leftovers

Chunky Monkey Peanut Butter Overnight Oats are great for making ahead and leftovers.  You can make ahead this and store it in the refrigerator for up to five days, making it a great make-ahead breakfast.  If you pull them out of the fridge and they are hard, add another splash of milk to get them moving again.
 

Freezing

I would not freeze overnight oats as the consistency would be strange when thawing them.
 
I calculated the nutrition facts without the chocolate chips sprinkled on top.  They are about 75 calories per tablespoon so if you are counting sprinkle them with care. :-)
